Superfood Breakfast Bites

I am sharing this recipe from Dr. Michael Greger’s ‘How Not To Die Cookbook’ I am taking it straight from his book and sharing it with you because I think it is so nutritious I want everyone to have these for a healthy breakfast and/or snack idea. I omitted some of the substitution options, but like always you can substitute any ingredient if needed. The only caveat with this recipe, is that you must soak the dates for 20 mins before making. So, if you are planning on making these, start the dates early.

Ingredients

¾ cup pitted dates, soaked in hot water for 20 mins, then drained

¾ cup walnuts

¾ cup dried cranberries or apricots

¼ cup sunflower seeds

2 tbsp goji berries

1 tbsp chia seeds

1 tbsp hemp hearts

2 tbsp ground flaxseeds

¼ tsp cinnamon

1 tsp pure vanilla extract

Instructions

In a food processor, combine the drained dates and nuts and pulse until nuts are finely ground. Add remaining ingredients and process until well combined. I find I have to use a spatula to take the mixture off of the sides of the processor a few times to get it all mixed together. The mixture should be sticky, if not add a little water at a time until it gets to the right consistency. If too wet you can add more flax seed or even some rolled oats.

Once combined, use your hands to roll into 1-inch balls. Keep in the refrigerator.
